Craig, can't offer any mounters in Scotland but from the tone of your post I am guessing you are looking for some advice about 'frames' etc for your Father and Grandfather's medals. There are several threads on here about memorial frames, medal groups etc and I suppose you have already looked at them.
At the end of the day I think it comes down to your own opinion of how (and how many) documents you would like to include. Personally I feel a small frame with swing mounted medals, one or 2 certificates or official notices and a nice photograph is enough. Anything else could be kept in a folder for family use. That's my personal opinion.

Glad you want to keep your family history alive.
