I think you have as much info as we can find based on the info supplied. As suggested in an earlier posting

In order to obtain his service records, which will tell you what he did and who he was with in WW2, you need his death certificate (if he is dead) or if he is still alive then he can apply for his records himself. I assume from earlier posts that he has died, so therefore you will need his death cert, which I assume you do not have, so it is possible to obtain one from the Registrars Office in the area in which he is buried (normally).

Based on the info you have provided:

Name: George Ernest Williams [or] Ernest George Williams
Mothers name: Lotte (maiden name unknown)

My granddad told me he was a Staff Sergeant (I really do not know how accurate this information is though)
Born: ?/?/1920 (give or take a few years)
    Lived in North London
    He also survived the war.

Additional Info: He had a German Shepard which had to be put down after the war because it only accepted orders from him.

From this we cannot be certain of his forenames, or his date of birth. Data has been given as best we can to provide what the records show for the parameters as you have supplied.
It will be almost impossible to find anything about his service in WW2, based on the details you provided above, until his service records are copied and in your possession. You can the copy them into this thread and some pieces of the jigsaw can then be put together.

Trying to point you in the right direction

Brothers name: Bert Williams (Went to New South Wales Australia and fought in ww2 too)

    So from post 13:

    Name: George Ernest Williams
    Birth Date: 21 May 1920
    Date of Registration: Mar 1992
    Age at Death: 71
    Registration district: Islington
    Inferred County: London
    Volume: 13
    Page: 1491

I cannot find a record of birth for a George Ernest Williams with a mother whose maiden name is Minett in the UK - that does not mean there is not one.
However if you believe the info details on his death are as above, then contact/apply to Islington Registrars Office for a copy death cert and send that with the forms from the link - https://www.gov.uk/requests-for-personal-data-and-service-records#how-to-apply-for-service-personnel-records - plus the cheque to obtain his WW2 service records, they will tell you all about his WW2 service, including his rank etc.

    Oct-Nov-Dec 1926 Lambeth London

    Alfred Williams

    Agnes Williams

    Try Ernest George Williams
    Edited to add:

My grandad said the mothers name was Lottie, maybe the maiden name is different but he first name is definitely Lottie.

When births are registered they are done using the mothers maiden name (i.e. her maiden surname or her surname from a previous marriage) the forename has no bearing on the search.

    Re Ernest George Williams
Between 1919 and 1921 there were 11 births - none have a mothers maiden name of Minett, only 1 was born in London (Bethnal Green - mothers maiden name Bottrill)

Without concrete details we are chasing shadows

Was there a Lottie Dolling (as you previously said about the surname dolling)

I have previously said that the birth cert normally has the mothers maiden name - surname - it does not provide a forename.

You also previously stated that there was no recollection of a Dolling in your family history

Please take some time to check ALL the details in this thread and make yourself a family tree to ascertain what are facts and what are not

My granddad is in his 70's and says he doesn't think there was a dolling, he doesn't even know when I was born, like I said before, all I know is the mothers first name is Lottie, fathers name is Ernest George Williams and he died in a fire in the 80's in Islington. He had a brother named Bert.

    Right

Deaths for an Ernest George Williams sometime in the 1980's in London

    Name: Ernest George Williams
    Birth Date: 12 Dec 1920
    Date of Registration: Mar 1984
    Age at Death: 63
    Registration district: Greenwich
    Inferred County: London
    Volume: 12
    Page: 1037

So you would need to apply to Greenwich Registrars Office for a copy of his death cert - if you think this is the right person

Just out of interest searching through all the deaths I came across this Williams death which caught my eye:

    Name: Minnett Williams
    Birth Date: 29 Jul 1919
    Date of Registration: Oct 1984
    Age at Death: 65
    Registration district: Hackney
    Inferred County: London
    Volume: 12
    Page: 1335

Nah it's not him because Greenwich is south London and he was in Islington and I do not know who the last person is.

From what you have said he lived in Islington, but perhaps he died in or around Greenwich (even in a hospital there) so its time for you to do some family research and tie down some details, in order for you to progress your request further.

He died in a house fire in Islington, I'll ask my grandad again of the names mentioned. Have you tried a Bert Williams, his brother who went to Australia, New South Wales?

Just a thought have you tried researching/contacting the Islington Gazette for records of fire between 1979/1989.
They have some records of the people tragically affected. Hope you'll find something to help your quest.

Hi, have you got a link?
    Thanks

no sadly I don't have a link. But if you google Islington Gazette, fires between 1979/1988. You should find a contract to the paper.
There would also be London Fire Brigade records but they do not always give out any info worth a try though.
    Good luck

I just spoke to my granddad again and he told me the name was not albert.... in fact it was Richard. Now my g-dad has changed his mind about this, there is no way to know if the mothers maiden name I stated is correct. On Thursday I will hopefully be able to see some letters he wrote and hopefully some names.
