The IMT trial of the major Nazis covered a much wider range of crimes, but also included the Holocaust and it was the first systematic presentation of the Holocaust events after WWII. This Yale University site contains a key collection of documents: http://www.yale.edu/lawweb/avalon/imt/imt.htm
I think the British have also put the testimony on the web, too. The cross-examination of the Nazi witnesses is fascinating stuff.
There is a very wide range of documentation on this British academic site: http://www.ess.uwe.ac.uk/genocide/

I found the specific indictment and background of Pohl to be very interesting. The first part described the set-up admin and cohorts with Pohl's (2nd part) it set out the camps and the practices. Some of the memoranda are just amazing. http://www.yale.edu/lawweb/avalon/imt/pohl/indict4.htm http://www.yale.edu/lawweb/avalon/imt/pohl/open4.htm
